Salads: the staple of my diet

It’s funny when I think back to when I was a kid, or a teenager, or college student and I thought if I ate a salad I was being super healthy and it meant I could eat garbage and it would “even out.” Ha. It’s funny because now, I crave salads. I love to make my own, mixing lettuce, carrots, fresh fruit, nuts, grape tomatoes, etc. But sometimes I run out of time to even mix my own salad, or I run out of ingredients, or I am just plain lazy. Well, no fear, because Trader Joe’s sells pre-made salads! And they are delicious! The newest one I love is their Kale and Edemame Bistro Salad. The only issue is the dressing isn’t vegan, but I figure if I eat one of these salads only once in awhile I should be ok. I normally only eat vegan dressing, such as balsamic vinaigrette or sweet basil vinaigrette. Yummy. Here’s a photo of the trader joe’s salad, although now they come in a square plastic container. Still delicious! Vince loves them too, and they’re filling, so usually makes a good dinner (almost too much for me for lunch-time since I eat a lot of fruit as well at lunch!) 🙂
